When grocers and markets are overrun with bright red British strawberries you know that summer is finally on its way. Their season tends to run from May until September, with their heady scent and sweet flavour synonymous with light summer dishes.

Add all of the ingredients to a bowl and mix well. Cover with cling film set aside in the fridge for 1 – 2 hours to marinate
- 10ml of balsamic vinegar, aged
- 10g of sugar
- 5g of fresh mint, chopped
- 1 pinch of salt
